Varieties: 100% Xarel·lo.
Production: Direct pressing without stripping or crushing. Fermentation with indigenous yeasts in old 500L French oak barrels and clay amphorae. Aged for 6 months with its own yeasts. No movement is made to the wine until bottling. No sulfites added during the process or filtering.
Viticulture: Xarel·lo from the Boet Vell Vineyard planted in 1978, located on the property of Sant Sebastià dels Gorgs in the Alt Penedès region. North-facing plot of extremely calcareous soils and frank texture (balance between silts and sands). Cultivated following the principles of biological agriculture and moon cycles. Vinified and bottled entirely on our property. We seek the maximum expression and connection of Xarel·lo with the soil, the vintage and the purity of the environment that surrounds it.
