Elaboration: The manual harvest usually begins in mid-October and the grapes are transported refrigerated to the winery to preserve all their aromatic complexity. Once there, the must will ferment at a controlled temperature and the malolactic fermentation will last until the end of the year. In March, the best wines are selected to begin aging in barrels: Tempranillo for 36 months and Grenache for 30, both in French oak. During this time, 5 to 6 shifts are carried out that allow, among other things, the wines to be progressively cleaned and kept aerated for a correct evolution. Once both aging has been completed, the wines are assembled and bottled.

Service: Serve between 17-18ºC.
