Varieties: 65% Petit Verdot, 25% Syrah, 5% Tintilla de Rota, and 5% Cabernet Sauvignon.
Wine history: From the planting of the vineyards, the selection of varieties, the perfectionism in the processes of vinification and aging, in Tesalía everything has been done to create the “grand cru” of Andalusia. The main focus has been to create wines of exceptional quality and style that show concentration, elegance, complexity, balance, length and nobility as they age. Ready for immediate consumption but will grow over the next ten years.
Sugar: 0,20 g/l
Designation of Origin: IGP Cádiz
Elaboration: Tesalía coming from the plot of Petit Verdot nº 5 and n 10, the plot of Syrah nº1, a little of the plot nº 2 of Tintilla de Rota, and the plot nº 9 of Cabernet Sauvignon, these plots have a predominantly north-east orientation, occupying very steep and ventilated slopes that correspond to the cooler vineyards of Celler Tessàlia. The harvest is done manually and at night to take advantage of low temperatures. As for the elaboration we carry out cold pre-fermentative maceration for four days, to preserve the color, aroma and flavor of the grapes, fermenting the varieties separately for approximately between 20 or 25 days. Finally, this wine was aged for 12 months in French oak barrels.
Service: Serve between 15 – 17ºC.
