Elaboration: Manual harvest. Film maceration and stainless fermentation for 36 days. Aged with lees for 6 months in stainless steel tanks. Malolactic fermentation in the same tank. Once aged in the tank, Terces White is aged in oak and acacia barrels for 8 months more. Clarified, filtered and bottled.
Service: Serve at 8ºC.
Pairing: Due to its structure and complexity, it has a very wide range of combinations. Fatty fish, hunting, truffle dishes, cured cheeses… Harmonies by affinity or contrast within the glass.
