Introduction: This is a wine tribute to the founder and alma mater of the winery, Nemesio Fernández, who with tenacity and eagerness managed to create a family winery based on the principles of artisanal viticulture. It comes from the Vineyard of San Salvador, planted more than 70 years ago by Nemesio, along a gentle slope that rises to 700 meters. We wanted to make a wine of great elegance and complexity and for him we only use the grapes from the highest part of this vineyard, which means talking about a micro-plot of only 0.4 hectares. The result is a wine where elegance and balance prevail, and where time also plays an important role in its development. A tribute to our father, representing the character and way of understanding the world of wine.

Elaboration: In order not to interfere with the subtlety and delicacy of the grapes that grow here, we work in a cellar with very short macerations and ferment with their own yeasts in small capacity tanks. The idea is to get all the fruit and balance that Sant Salvador offers us, the most stable vineyard we all work with. We grow the wine in French oak barrels from the Allier and Tronçais forests for a period of around 18 months, always depending on the style of harvest we work with.
