Introduction: Maximum expression of the terroir concept of our house. He is a newcomer to the winery, as we had to wait many years to find the key to showcasing a unique and singular Bierzo. This is a wine from a single plot, Viña Sapita, so we previously had to master the essence of this plot, which is only achieved through years of practice. and work in vineyard. The Sapita Vineyard is a small treasure for us. It is two and a half hectares of a century-old vineyard of mencía planted in 1903, with unique geological qualities thanks to its high mineral concentration of slate and iron. Here the yields are very low, but the grapes are simply unbeatable. This plot shows a unique character, which explains the style of this wine, unique and not comparable to the other elaborations that we bottle.
Name of the estates: Viña Sapita.
Soil type: stony with large stones with the presence of slate and quartz.
Viticulture: vines planted in pots with an average age of 80 years, harvested by hand.
Elaboration: Tebaida 5 is the pure expression of Viña Sapita and what we try in its elaboration is not to put us in its way towards this expression. Therefore, we let the vinification be completed in 500-liter open French oak barrels, always with the vineyard’s own yeasts. We observe that everything develops normally, although we rarely have to intervene in this process. It then rests in 225 and 700 liter barrels for a period of around 18 months. At this point we let the time work with the wine and leave it in the bottle for a few years until it has just refined. The result is a combination of elegance, structure and complexity that we understand will have a very long life ahead.
