Elaboration: Manual harvest First the grapes are separated from the grapes and transferred to a tank where they will remain for 48 hours at a temperature of between 5 and 10 degrees. Second, we ferment (transform sugar into alcohol) at low temperature. Our way of mixing skin, seeds and liquid is through a new disintegration system in which the “hat” is therefore completely immersed in the liquid. Finally, this wine remains in 225 liter French oak barrels for six months.
