Climate: Atlantic with Mediterranean influences.
Elaboration: Manual harvest in boxes of 12 kg of grapes from vineyards of average age of 60 years. The grapes are then placed in a cold room (4-6 ºC). First, selection in tables of the best grapes. Second, made with flower must (from unpressed grapes) extracted using a rotor tank. The wine has been kept with its lees for 8 months aged in new barrels. Batonnage (lees work) is practiced to achieve, as a result, greater complexity by turning the barrels. Finally, it is aged for 8 months in new barrels, exclusively French oak.
Service: Serve between 8 and 10ºC.
Pairing: Cheeses, seafood, white meats, fish, Asian cuisine and risotto.
