Sourness: 5,5 g/l
Sugar: 0,6 g/l
Elaboration: Manual harvest and collection in boxes of 20 kg. Skidding and cold maceration for 6 hours. Soft pressing and stainless fermentation for 20 days at 16 degrees. Aged with lees during 4 months. Cold stabilized, clarified and gently filtered before bottling.
Service: Serve between 6 and 8ºC.
Pairing: Its good acidity and aromatic complexity open a wide gastronomic spectrum, either by affinity or contrast of aromas and textures. Soft white and blue fish, pasta, brothy rice and white meats, creamy or cured cheeses, smoked and Iberian sausages.
