Elaboration: Manual harvest and collection in boxes of 20 kg. Maceration and fermentation in stainless steel tanks. Malolactic fermentation in stainless steel. 40% of wine has aged for five months in French and American oak barrels. Clarified, cold stabilized, and gently filtered before bottling Petites Estones Red.
Service: Serve between 14 and 16ºC.
Pairing: Based on its freshness, it is ideal for pairing pâtés, creamy raw milk cheeses, fatty fish and stewed meats (beef, rabbit, chicken…).
