Elaboration: Maceration and fermentation with its own skins for 98 days in clay amphorae and subsequent aging in old French oak barrels for 2 months. Spontaneous fermentation.
No sulfites added during the process or filtering.
Viticulture: Macabeu from the Vinya Sobre Casa, planted in 1969 and located on the property of Sant Sebastià dels Gorgs in the region of Alt Penedès. Plot with North-East orientation of extremely calcareous soils and frank texture (balance between silts and sands). Cultivated following the principles of biological agriculture and moon cycles. Vinified and bottled entirely on our property. We seek the recovery of traditional winemaking techniques and the immense potential of the area. The contact with the skins in communion with the saline expression of the calcareous soils will evoke a full, austere and living Mediterranean.
