Vinification: Must obtained with a very soft pressing, in order to protect the finesse and the floral aromas that characterize it. Partial fermentation in stainless steel vats and in large egg-shaped clay jars in order to achieve maximum complexity. Subsequent aging in these containers with their own mothers for a few months in order to give fat and volume in the mouth to a variety that is characterized by its good acidity and freshness.
Pairing: Due to its good sour and freshness, this wine has a wide versatility. Combines perfectly with any fish or seafood dish, seasoned with or without lemon. It also does this with a wide range of cheeses, as its good acidity cleanses and reduces its fat content. The same goes for any dish cooked with high-fat sauces or creams. It also lowers the fat of a good duck, high-fat pork or other similar high-fat dishes.
Its good sourness also combines well with any dish made with a good tomato-based stir-fry, where the acidities complement each other. Obviously, any dish of sausage with bread with tomato, pizzas, pastas are good allies, or simply to take it alone as a good companion.
