Elaboration: We start the harvest on September 3 at Finca Silvosa (O Rosal) with an excellent ripening. We harvest in 20 kg boxes that we quickly transport refrigerated to the cellar to go down to the selection table, where the grapes that are not perfectly healthy are removed. After destemming, we cool the grapes to 10ºC for later maceration for 10 hours. We carry out the pressing in pneumatic presses in inert atmosphere avoiding any oxidation. After decanting, the must fermented in tanks at 15º. Due to the characteristics of this harvest, the must has a perfect balance in its acidity. Until its bottling, the conservation of the wine was carried out together with its fine mothers who, by means of
daily subsidence, were kept in suspension bringing complexity to the wine.
Service: To serve between 10-12ºC.
Pairing: Ideal accompaniment to snacks, seafood and fish. Recommended with soft cheeses, oriental food, rice, pasta and poultry.
