Wine: La Trucha
Varieties: 100% Albariño.
Information of the vineyards: Vineyards located between 200 and 350 meters above sea level, on the right bank of the river Miño. Strains planted in trellis. The vineyards have an average age of 25 years, being over 45 years on some farms.
Climate: Being an inland area, the Atlantic winds arrive more attenuated, but still allowing the grapes to pick up their prized salinity.
Elaboration: After spreading and pressing the grapes in a pneumatic press, the must is transferred to stainless steel barrels where cold fermentation takes place in order to preserve its full aromatic potential. Once the fermentation is over, the wine stays with its fine mothers for 3 to 6 months.
Service: Serve between 7 – 10ºC.
Pairing: Ideal with fish and seafood.
