Soil types: sand – clayey and clay – calcareous.
Elaboration: Manual harvest with strict selection in the vineyard itself and in several passes. Exclusively in 3000 and 4000 liter barrels, open barrels and clay amphorae. Fermentation between 23 and 25ºC with native yeasts. Malolactic fermentation in barrels. Finally, aging for eleven months in used 225 and 500 liter French oak barrels.
Service: Serve between 14 and 16ºC.
