Introduction: One of the last wines to arrive at the winery. With him we wanted to look for the maximum expression of the mencía old vineyards. To some extent we are obsessed with providing the best raw material for the vineyards with an altitude of 600 to 700 meters. It comes from the middle parts of our vineyards from Valtuille de Arriba. With ages between 50 and 100 years, which provides a controlled production and slow and calm maturation.
It is a complex wine, as it seeks to express its mencía character, to represent the environment where it grows, the village of Valtuille de Arriba, with the freshness and structure that is able to give the place where we are.
Name of the estates: Valtuille de Arriba.
Soil type: Clay soils and stones.
Viticulture: vines planted in traditional way with an average of between 50 and 100 years, harvested by hand.
Elaboration: We carried out a cold pre-maceration in a stainless steel tank to later start the fermentation with the action of its indigenous yeasts. At the end of the fermentation, we leave the fine lees in contact with the wine for a while, never more than two months, to prepare it before it is aged in barrels. The barrel in this wine plays an important role, we do not want it to be intrusive so we use a low percentage of new woods. We want the wine to be protected and made strong, so that time can coexist with it in harmony.
