Elaboration: This cava is the result of the synergy between the wineries, first of all by Estones Vins and Oriol Rossell, and with the complicity of the rock band Mishima.
Made by Salvi Moliner, winemaker of Estones Vins and Oriol Rossell Cellars, at the Can Cassanyes Property, in Sant Marçal (Alt Penedès).
Manual harvesting and picked up in 20 kg boxes. Direct pressing. Extraction of lees. First fermentation in stainless steel tanks. Second fermentation minimum aging of 24 months before disgorging. No liquor added.
Service: Serve between 14 and 16ºC. Prior settling.
Pairing: It is a versatile wine, with many gastronomic possibilities. As it is a Cava Reserva, we will achieve harmonies by affinity and contrast depending on the dish and its cooking, being especially recommended for rice of all kinds, fatty fish, and baked meats (lamb, goat, pork).
Musical pairing: Cava inspired by Mishima’s song “Guspira, estel o carícia”, where one of its paragraphs says in Catalan: “la meva ànima voldria enlairar-se, però el meu cós no la deixa sortir, és com si jo vulgues allunyar-me de mi.”
