Elaboration: The term “en rama” means that the wine has not been filtered or cold stabilized. This is done in pursuit of the goal of enhancing its uniqueness. In addition, it is not ‘refreshed’ through the usual system of nurseries and soleras, with sacks and periodic dews on scale, but using the same vintage. This finish is the clearest representation of our Serra de Montilla and the native yeasts that favor the appearance of the flower veil.
