Wine: Fincas de Ganuza Reserva
Varieties: 90% Tempranillo and 10% Graciano.
Vineyards age: Between 25 and 40 years.
Soil type: Clay – calcareous.
Climate: Atlantic with Mediterranean influences.
Elaboration: Manual harvest in boxes of 12 kilograms of grapes, from vineyards aged between 25 and 40 years. Controlled temperature, prior to fermentation in cold rooms specially designed for this, for a period of 24 hours (4-6 degrees). First, there is a selection of grapes on the table and separation of shoulders and tips. Second, this wine is made from skinned shoulders. Fermentation in small stainless steel tanks and 7000 liter French oak vats. Finally, aging for 24 months in new barrels 75% French oak and 25% American oak.
Service: Serve between 15 and 17ºC. It is recommended to oxygenate it before serving.
Pairing: Beef stew and pepper steak, in short on a fairly hearty dish.
