Varieties: 94% Tempranillo and 6% Carignan, Grenache and Macabeo.

Elaboration: The grapes were harvested in 20 kg boxes and, in the cellar, remained on refrigerated platforms until they reached 4ºC. After destemming and treading, they were incubated for 7 days at a temperature below 10ºC, performing a prefermentative cold maceration that highlighted the characteristics of the grapes. After the alcoholic fermentation, 100% completed the malolactic fermentation for 64 days in new American and French oak barrels, with weekly batonnage. It was aged for 24 months in American (80%) and French (20%) oak barrels with four shifts by the traditional method. We have left this wine in storage for 8 months to round out the blend, bottling in January 2019.
Service: Serve at 16ºC.
Pairing: It is a perfect wine for gastronomy for its structure and elegance. With a long sip, it is paired with stewed and roasted meats, as well as with game and cured sausages.
