Elaboration: Manual harvest and collection in boxes of 20 kg. Maceration and fermentation in stainless steel tanks for 21 days Grenache and 25 days Carignan. Aged for 14 months in French oak barrels for Grenache and American oak for Carignan, with malolactic fermentation in the same barrels. Due to its elaboration and aging, it can produce sediments.
Service: Serve between 14 and 16ºC.
Pairing: Due to its structure and complexity, it will harmonize very well with powerful and persistent dishes: Pork, lamb and goat, hunting, beef will harmonize perfectly with the structure and persistence of the “Estones” from Mas Sersal Wines.
