Climatology: Very cold and dry winter. April was the fourth wettest month in ten years. Spring temperatures were cooler than the annual average and annual rainfall was the lowest in the last 4 years. The month of August (ripening) was very dry and hot.
Elaboration: Following the parameters that govern organic viticulture. Manual harvest. Use of selected yeasts at temperatures below 27ºC. Open lift started in Alcoholic Fermentation and closed at the end. Aged in 500-liter French oak barrels from Allier, Tronçais and Nevers for nine months.
Others: Suitable for vegans. Clarification with vegetable protein.
Service: Serve between 15-17ºC.
