Introduction: A plot wine that takes its name from one of the most unique plots in our house, El Castañal. This is the most beautiful vineyard, 2 hectares of Mencías in glass of which we have no record of planting, but which must be around one hundred years old. Everything in her is a spectacle. It is a magical place and the work here is very much appreciated, as the vineyard itself is self-regulating, as long as we know how to read its needs for vegetation and pruning. Only 0.3 hectares of its highest part are responsible for this exclusive wine. This small plot is a silent witness to the passage of thousands of pilgrims throughout the year on their way to Santiago de Compostela, allowing them to rest and catch their breath on one of its sides, and being involuntarily portrayed by these walkers who see in her her singular beauty. At the grape level, El Castañal also shows the same beauty, as the uniqueness of its poor quartz and slate soils offers very low yields (15hl / ha.) And a high minerality and complexity to the wine.

Elaboration: We elaborate the wine in a completely artisanal way, from the harvest to the destemmed grain by grain. We ferment in open French oak vats, where we introduce the unpressed grapes together with carbonic snow, making a pseudo carbonic maceration to enhance the most fruity part of the plot. We then let it rest in French oak barrels, where we look for a fine and subtle contribution of the wood, for a period of approximately 14 months, during which time the mineral features of the wine settle down to achieve a rich subtlety and elegance.
Finally, the rest in bottle will be a fundamental part in the elaboration, since all the wealth that offers this vineyard requires of a period of time oscillating in bottle that finishes rounding all his excellent qualities.
