Wine: Drappier Rose de Saignee
Varieties: 100% Pinot Noir.
Elaboration: Only the juice of the cuvées, that of the first pressing, is used. Mechanical presses with weak pressure. Use of gravity to prevent tipping, which prevents oxidation. Minimal use of sulphurous. Natural mud removal. Alcoholic fermentation with a duration of 2 weeks at low temperature. Subsequent natural and complete malolactic fermentation. Not filtered. ‘Assemblage’ – 100% of the wines have been aged in vats in order to preserve maximum freshness. After bottling, the cuvée matures for 2 to 3 years in rime. Expedition liquor: 7.5 g/l.
