Wine: Drappier Millesime Exception 2015
Varieties: 65% Pinot Noir and 35% Chardonnay.

Elaboration: Only the juice of the cuvées, the first pressing, is used. Mechanical presses with weak pressure. Use of gravity to prevent tipping, which prevents oxidation. Minimal use of sulphurous. Natural mud removal. Alcoholic fermentation with a duration of around 2 weeks at low temperature. Subsequent natural and complete malolactic fermentation. Not filtered.
Aging – 50% of the wines aged in vats for 1 year. After bottling, the cuvée matures for a minimum of 5 years in rime. The slaughter date is on each label. Expedition liqueur: 5.6 g/l, liqueur matured in Limousin oak barrels.
