Elaboration: Only the juice of the cuvées, that of the first pressing, is used. Mechanical presses with weak pressure. Use of gravity to prevent tipping, which prevents oxidation. Minimal use of sulphurous. Natural mud removal. Alcoholic fermentation with a duration of 2 weeks at low temperature. Subsequent natural and complete malolactic fermentation. Not filtered. Minimal use of sulphurous. 5% of the wines are aged in fudre for 1 year to enrich the ‘cuvée’. Expedition liquor: 7 g/l
