Climatology: Very cold and dry winter. April was the 4th rainiest month in 10 years. Spring temperatures were cooler than the annual average and annual rainfall was the lowest in the last 4 years. The month of August (ripening) was very dry and hot.
Elaboration: Following the parameters that govern organic viticulture. Use of selected own yeasts at
lower temperatures than 27ºC. Aged in French oak barrels from Allier, Tronçais and Nevers and bottled for at least 15 months.
Others: Suitable for vegans. Clarification with vegetable protein.
Service: Serve at 16ºC.
