Elaboration: On October 15 we started the manual harvest, in small boxes of 20 kg, with a first selection in the field of the best grapes, with a perfect state of ripeness and health. In the winery we make a new selection on the table. After a gentle peeling and treading, the grapes passed to the tanks where the alcoholic fermentation took place at a temperature below 28ºC. After 16 days of fermentation and maceration, the wine was malolated in French oak barrels with weekly beating for two months. Aged for 22 months in new French oak barrels (70%) and the rest in two-wine French oak. We shake this wine three times by the traditional method, being bottled in February 2019
Service: Serve at 16ºC.
Pairing: Appetizers, vegetables and rice. Birds and feathered game. Fish stews. Creamy and poorly cured cheeses. Roast lamb.
