Elaboration: We harvested in boxes of 20 kg on October 17 in the early hours, taking advantage of the usual low temperatures in the area, to make a natural prefermentative cold maceration for 3 days. After accessing the selection table and a gentle peeling and treading, the grapes passed to the tanks where they underwent alcoholic fermentation in 14 days. The wine then passed into new French oak barrels in which, for 62 days, it completed the malolactic fermentation with a weekly battonage of the mothers. Afterwards, we make a selection of the best barrels to start aging in new French oak for 16 months, with two upsets by the traditional method. This wine was bottled in May 2018.
