Cabernet Sauvignon

Cabernet Sauvignon is one of the best known red grape varieties in the world. It grows in almost all major wine-growing areas, in a diverse spectrum of climates.

Despite its prominence in industry, it is a relatively new variety, the product of a cross between Cabernet Franc and Sauvignon Blanc during the seventeenth century in France. Its popularity is often attributed to its easy cultivation and the consistency and flavors that express the character of the variety.

The profile it gives tends to be that of wine with a good body, lots of tannins and an appreciable acidity that contributes to its aging potential.

For many years, the origins of the variety were unclear and many myths and conjectures have emerged. The word sauvignon may be derived from the French sauvage, which means wild, and may refer to the fact that it is a wild vine native to France.

Finally, the true origins of this vine were discovered in 1996 with the use of DNA profiles at the University of California at Davis. DNA evidence determined that he was a descendant of Cabernet Franc and Sauvignon Blanc. It is likely that this crossing took place in the seventeenth century.
